It would be good to list your system specs, namely CPU and platform.
CPU: Ryzen 1600X
GPU: RX Vega 64 Liquid Cooled
RAM: Viper 4 DDR4 32 gigs

What I would try is running your game in performance mode and setting OBS to be excluded by Pro Balance.
Then see how that goes but with only 6 cores you are limited to setting separate cores per game and OBS.
That said you could try using CPUsets and limit OBS to the last few cores. So the game uses all cores and OBS use only 5 and 6 or 4, 5 and 6. You will need to experiment depending on OBS load.
